heinz-esque cream of tomato soup


in pictures



ingredients
roasted tomatoes, (used tinned plum tomatoes in winter)
shallots, wine,
1 apple, parsley, 1 clove garlic, very good stock
,
cream




  • sauté shallot apple and garlic, and add the tomatoes and stock
  • plus tied bundle of parsley
  • simmer for 40 mins, remove parsley
  • purée thoroughly with a stick blender
  • make croutons and cool
& add cream to soup before serving
