courgette ratatouille



ingredients

courgettes, cut to chunks
shallot
garlic
fresh tomatoes
breadcrumbs

  • sauté courgettes, shallot & garlic till gently golden, some recommend to do this individually - but I don't think you need



  • place courgettes in an oven dish, top with tomatoes and breadcrumbs
  • drizzle with ev olive oil
  • & bake at 180 for 30 - 40 minutes
you can add parmesan too, but I prefer it without.
