1 ripe avocado

1/2 small onion

2 tomatoes

1 red pepper

1 chile pepper

1 clove garlic

pinch cumin

2 tbsps coriander leaf

2 tbsp white wine vinegar

2 tbsps olive oil

& pepper

  • Dice the avocado, onion, tomatoes and red pepper.
  • Mince the chile and the garlic.
  • Place all the ingredients in a large bowl and add the cumin, the chopped coriander, vinegar and oil and the salt and pepper to taste.
  • Mix together and leave for 30 minutes; taste again for balance.
To accompany fried empanadas

Whilst you might find it like that, the typical stuff is blended more.
Personally, I like a bit of texture to mine.
