kofta kebabs


the koftas
1 medium chopped onion
2 green chillies - seeded and chopped
1tsp ground ginger
1tsp ground cumin
chopped coriander
chopped parsley
olive oil
1 tsp salt & some pepper
minced lamb
1 egg yolk

  • Blitz onion, chilli, garlic, coriander and parsley with the olive oil.
  • Pop in a mixing bowl and add lamb the other ingredients and season. Squish with your hand, & pop in fridge for a while.
  • Shape the mixture around flat metal skewers, for a sausage shape. If using wooden skewers, soak them first (I didn't as you can see)

Cook in the grill, oven or barbecue. Serve in pitta pockets

the tzatziki
A carton greek yoghurt
1/2 cucumber peeled and grated
2 cloves of garlic
2 tbsp virgin olive oil
2 tbsp white wine vinegar
fresh chopped mint
s & p

Drain grated cucumber in a colander for 10 minutes and then squeeze dry. Mix everything together and serve chilled.

the chilli sauce
cook as per a rich tomato sauce, adding garlic and fresh chilli
Blitz when cool.
