rich tomato sauce & a rich chilli sauce

I use this an awful lot in all my cooking, for pastas, Italian baked dishes & pizzas,
& for a rich chilli sauce even as above .......................


one onion, blitzed
one blitzed tin of tomatoes or slow roasted fresh tomatoes
glass dry white wine
plenty ev olive oil

  • saute the onion for 5 minutes in ev olive oil
  • add the wine, puree of tomatoes, simmer & reduce till very thick and spitting furiously at you

  • add chopped chillies, 1 clove garlic & purée when cool
  • Rick Stein tip, reduce level tablespoon sugar with glass red wine vinegar to a sticky syrup, & add to your tomato sauce
