basic tomato sauce, passata



ingredients

half glass ev olive oil
plenty of fresh tomatoes, or fresh combined with tinned
s & p
one shallot

  • sauté a small shallot & add the tomatoes in the olive oil, reducing to a thick passata
  • you can blend for smoothness if required
variations
add garlic, a chilli, or herbs
add cream for a pasta sauce
