the millennium cookbook - moroccan grilled vegetable marinade

this marinade recipe has been provided with the kind permission of Eric Tucker, to be found in his Millennium cookbook




ingredients


1.5 cups tomato passata
1/2 cup fresh orange juice
1/2 cup fresh lemon juice
1/4 cup tamari
4 cloves garlic
3 tablesp honey
1 teasp red pepper flakes
1/2 teasp cinnamon
1 teasp ground coriander
2 teasp ground cumin
1 teasp fennel seeds, ground
2 teasp fresh grated ginger
1 tablesp balsamic


  • purée the ingredients in a blender until smooth.
  • marinade your selection on vegetable skewers in the sauce, here courgettes - halloumi - pepper - fennel
  • & barbecue turning carefully

I also found a use for the Co-op shopping baskets that were being left in front of our garage



Serve with tomato salad and rump or sirloin steak!

Lovely. I use that one on big flat mushrooms, either somoked or not, then thrown into a ciabatta for a lovely drippy sandwich.

I should say, that the first book does include honey, which isn't vegan. I always use agave syrup instead. The second book doesn't.

No. There is vegan feta, which is tasty, but pre-cubed, so not useful for everything. I don't think you could ever replicate that yummy squeakiness.

I get all overcome with authenticity when I'm making vegan/ veggie dishes.

Silly but I certainly wouldn't use this marinade with fish or meat - Oh no.

Purist me!

Now me, I would, Gill! That looks really delish. Would be fab using chicken or tuna as well. I have some amazing mandarin oranges at the mo that would subb great for the OJ. Neat little hibachi size BBQ you have there - perfect for two. We neeed something smaller than our large one for everyday cooking.
