chargrilled chicken with thyme & tarragon

ingredients - for the chicken marinade




chicken thighs, I used breast

fresh thyme & tarragon from the garden
lemon juice
2 garlic cloves


  • Purée in a spice blender
  • rub over the chicken and leave to marinate for a few hours
  • and barbecue for 10 minutes or so & leave to rest for a moment



ingredients - the lemon mayonnaise





1 egg yolk
1 tsp dijon mustard
grapeseed oil, plus a splash of ev olive oil

  • make up your mayonnaise
  • & add salt and pepper, half teaspoon white wine vinegar, a good squeeze fresh lemon juice
  • plus the grated rind of the lemon


serve the dish with a feta and melon salad
