cool on a bike rack - pumpkin seed sourdough

bread making and cycling, that's what I was doing this morning before it got too hot.

The loaf this morning is for David the framer, to thank him for his allotment salad crop the other day.

A simple overnighter, last night I briefly kneaded (for about 20 seconds):


40g white leaven at 70% hydration
350g strong white flour
120g rye flour
60g plain flour
150g pumpkin seeds
345g chiilled water
8g salt

then at 06:00 today, 8 hours later, I shaped the stiff dough to a baton, rested it seam-side up in basket
went for a bike ride
and an hour later, placed the mass onto a floured tray and baked at 220 for 30 mins, with a steam tray underneath
and 20 mins at 180

& cooled on a rack

People are always at me about breadmaking - "where do you find the time?" yada yada. They don't understand that once you get it sorted, the whole routine fits so comfortably into a busy life - just like this loaf! What do you reckon, Gill, total hands-on time about 5 minutes? And such a magnificent loaf to show for it! :)

Indeed. It took me longer to make the picture than to make the bread :)
The things I don't like about this method: waking up to a floppy dough, and that lack of control over the process.

I'm a bake during the day bread maker really, so I can keep my eye on what the little puppy is behaving like.

The happy medium is an overnight sponge I guess.

It looks a wonderful loaf - did you deliver it on the bike - I so like the idea of that. I regularly use pumpkin seeds in my rye sourdough - in fact since I started making my own, I always have. Maybe I should try something different.

That day I delivered the loaf by hand, not on my bike.
I shall do so next time, although it was parcelled up in baking parchment and string, & was still warm.

I do hope that impressed the framer enough when he's pricing up my painting surrounds :)

Lovely photo Gill, that's a nicely proportioned loaf you've made there, it's lovely when they work out so beautifully! I'm sure the framer appreciated it.

I've asked him about rocket today, and got the answer we are looking for.
